Cranberry Almond Bars

One of my favorite things about these bars is people are always SO impressed when they try them. It is such a simple snack – taking only 15 minutes and a handful of ingredients – but there is something about homemade granola bars that undoubtedly gets people excited. Perfectly sweet & slightly nutty, this recipe is sure to become a staple in your home.


  • 1/2 cup almonds
  • 1/2 cup pepitas
  • 2/3 cup dried cranberries
  • 1 3/4 cup rolled oats
  • 1/2 cup unsweetened coconut
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla powder (optional)
  • 1 tsp cinnamon


Line a 9 X 9 baking tray with parchment paper and set aside.

Meanwhile in a food processor pulse the almonds, pepitas and oats until they are all gently broken down.

In a pan, over medium heat, slowly toast the coconut until it becomes a caramel brown color throughout. Once toasted, remove from heat and add it to the oat & nut mixture. 

In a small mixing bowl combine peanut butter, vanilla, maple syrup and mix well to incorporate.

Slowly add dry oat & nut mixture to this bowl and stir until evenly combined.

Pour mixture into lined baking tray, making sure to pack it down with the spoon or your hands. It is important to tightly pack it down as this step is what prevents the bars from being crumbly and falling apart later on. Once bars are tightly, evenly packed – cover and transfer to fridge for at least an hour (overnight is ideal) before you cut and serve them!

Cut into bars, wrap in parchment paper and store in the fridge for the week – a perfect, quick snack to always have on hand!
