Home-made crackers!! Ever tried them??
It’s a perfect hearty snack idea when you need something healthy and FAST. The difference between these crunchy guys and the stuff from the store is that these are just the basics, the essentials. No unnecessary additives or extras – just some wholesome, fiber, omega, antioxidant and mineral packed seeds with simple spices. A 40 minute kitchen commitment and 8 ingredients and you’ve got snacks for the week! It’s not a bad idea to double the batch – Adam usually eats most of them before I have the chance to dig in – they are just THAT good.
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 Sesame seeds
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp dried parsley
- 3/4c -1 cup water
- S & P
Preheat oven to 350 F and line a baking pan with parchment paper. Set this aside.
Place seeds, spices and water in a bowl. Stir and allow to soak for 15 minutes to soften and bind it all together.
Once the 15 minutes are up, pour the mixture onto the lined pan. Place another sheet of parchement on top of the mixture and using a rolling pin, evenly spread the seeds and as thin as possible ( around 5mm thick is great!). This will allow for them to bake thoroughly and have an amazing crunch.
Sprinkle salt and pepper.
Place in oven and cook for 20 minutes.
Remove and cut into crackers, place back in oven for 10-15 minutes, keeping an eye on them, because these babies have a tendency to roast quickly! Once you pull them from the oven, carefully transfer to a cooling rack.
You can store these in an airtight container for up to 2 weeks!
