These are not your regular grocery store radishes. One thing I love most about my weekly run to the market is the variety and vibrancy of all the colourful produce. You find vegetable varietals you just aren’t able to get at the grocery store, due to the emphasis on quantity and uniformity in modern agriculture. Variety is essential to good health. A varied diet touches on all the key nutrient and micronutrient groups, providing a well- rounded & balanced foundation to vitality and well being.
So – this week I’m sharing my go-to 4- ingredient salad dressing. Versatile & ultra simple, this dressing is light and flavourful, with savoury salty notes and a hint of toasted sesame, adding it to your salad will make any greens absolutely delish.
- 1 head leaf lettuce, washed & chopped
- 6 radishes, sliced thin
- 1/2 soybeans
- 1/4 almonds, chopped
- 1 Tbsp sesame oil
- 2 Tbsp olive oil
- 2 Tbsp Tamari
- 2 1/2 Tbsp white vinegar
When making any salad, it is important to ensure you greens are dry after being washed. This will prevent them from getting wilty or even slimy once the dressing is added.
To make the dressing, combine all four ingredients and whisk together.
In a large bowl, toss the lettuce, soybeans, radishes and the dressing until everything is coated.
To serve, divide greens between two bowls and top with chopped almonds. Enjoy!
